I have a small rear view mirror that mounts inside the handlebar end.
To install, is it safe to cut the left grip end off, or do i have to install different grips?

You can safely cut the end of the grip to install your mirror. I would suggest that you loosen the brake lever mount (and the shifter mount, depending on which side you're installing the mirror). Then make sure the grip of as far as it will go on the handlebar.
With a mallet, "WHACK" the end of the grip against the handlebar. The handlebar will act like a cookie cutter and punch the exact size hole in the grip. This way, you do not need the cutshorten the width of the grip.
